As you may probably know, avocado is one of the healthiest food. Some benefits of avocado are: rich in vitamins and minerals, contains vitamins B, C, E, K and phosphorus, magnesium, iron, potassium, calcium and zinc and helps to lose weight as it is incredibily nutritious. Since it has heart-friendly healthy fats, it is very useful in lowering cholesterol and also helps strengthen immunity. There are more other benefits but these are the ones that I am interested in the most. Because of these benefits, I’ve always wanted to eat avocados, but I did not like its taste at all and I didn’t eat until the pandemic began. 🙁 Since I started making pastries and eating them all the time during quarantine, I had to stop at some point. Then I thought I may try to eat avocados with a few additional ingredients and now I no longer eat my breakfasts without avocados. I wanted to share how I eat avocado to give an idea for those who are looking for some tasty avocado recipes. So here are my avocado toast recipes for every taste.



How to Ripen Avocados Perfectly? How to store avocados?
When buying avocados, I do not mind if they are ripe anymore.Actually I prefer to buy it fresh if possible, because when I buy a ripe avocado, sometimes I find out that the inside of is a bit dark when I get home and it is actually very easy to ripen the avocado. I just put the avocados in a brown paper bag with apples. Depending on the freshness of the avocado, the avocado ripens perfectly 1 or 2 days.
Too much avocado can be harmful because of the oils it contains, so consuming 1/2 avocados a day would be ideal. I eat half an avocado on 2 slices of rye bread at each breakfast, so I use a quarter avocado on each slice. I put the remaining half of the avocado without removing the core in a storage container and squeeze a lemon on it so it doesn’t get darken.



Avocado Toast Recipes
Avocado toast with white cheddar: I mash the avocado with a fork, pour 1 teaspoon of olive oil on it, add a pinch of salt and mix and rub on the bread. I chop the old cheddar, tomatoes and green onions into small pieces and top them on the bread.
Avocado toast with smoked salmon: I apply labneh cheese on the bread. I mash the avocado with a fork, pour 1 teaspoon of olive oil on it, add a pinch of salt and mix it and rub it on the labne bread. I chop 1 slice of smoked salmon and spread it over the bread. I sprinkle capers and dill on top.



Avocado toast with olive paste : I rub olive paste over the bread. I slice the avocados and string them on the bread. I cut a few slices of red capia pepper and put it also on the bread. I’m shrinking some feta cheese to the top.
Avocado toast with beet: I boiled the beets and peeled them off. Then I cut it into several large pieces and pulse it on the food processor with a garlic clove, a pinch of salt and 2 spoons of yogurt. I spread this mashed beet on bread. I mashed the avocado with a fork, poured 1 teaspoon of olive oil on it, and added a pinch of salt. I cut a slice of onion into small slices, add it to the avocado and mix it. I spread this mixture over the mashed beets.



Avocado toast with hummus: I made hummus as an appetizer, so I decide to try it also with avocado. Since I made it myself, let me give the recipe of hummus shortly. I put 1 canned chickpea (400 g), 1 tea glass of tahini, 1 tea glass of water, 1 tea glass of olive oil, 4 garlic, 1 teaspoon of cumin, 1 teaspoon of salt, 1 lemon juice in rondo and pulse it until it becomes creamy. I spread some hummus on the bread. I slice 2 dried tomatoes and avocados and lay them on hummus.
Avocado toast with scrambled egg: I mashed the avocado with a fork, poured 1 teaspoon of olive oil on it, added a pinch of salt and mixed it and spread it on the bread. I broke an egg and beat it, then I grated some cottage cheese into it. I heat 1 teaspoon of butter in a pan, pour the egg mixture and cook a few minutes. I spread the cooked egg on the avocado and sprinkle some chili pepper.



Avocado toast with mushroom: I mashed the avocado with a fork, poured 1 teaspoon of olive oil on it, added a pinch of salt and mixed it and spread it on the bread. I put some sliced mushroom, 1 teaspoon butter and 1 sliced garlic clove in a frying pan and cook them until the mushrooms get a little browned. I spread the mushrooms on bread and sprinkle some pumpkin seeds on it.
Avocado toast with sunny side up: I crushed the avocado with a fork, poured 1 teaspoon of olive oil on it, crumbled some cottage cheese and mixed and spread it on the bread. I heated 1 teaspoon of butter in a pan and broke 1 egg on it. I spread the whites well in the pan so that the yolk is easily cooked in liquid form. As soon as the white part turned from transparent to white, I closed the pan. I cut the white to make it a little smaller and placed it nicely on bread.



Avocado toast with tuna fish:I squeeze a slice of lemon into a canned tuna fish with olive oil, add a little bit chili pepper and mix it. I spread ths mixture over the bread. I slice the avocado and lay it on the bread. I top some pomegranate on the top.
Avocado toast with bacon: I mash the avocado with a fork, pour 1 teaspoon of olive oil over it, add a pinch of salt and mix and rub on the bread. I sprinkle some chia seeds on it. I cut 1 or 2 slices of bacon, depending on the size. I cook it a bit with 1 teaspoon of butter and put it on the bread.
